The month of February is already over halfway gone and I have yet to cook a new vegetable this month. I am slacking. In my defense, I haven't been home very much this month, with my jam packed schedule of school, work and other commitments. I feel like I have been living out of my car, maybe I should seriously consider doing that, then I could park and sleep close to campus and save myself from the commute. Every morning I eat breakfast, pack a lunch (and/or dinner) pack my backpack and another bag with all of the books I will need and a possible change of clothes if I'm working, and head out. I've been running on lots of caffeine, and have had little time for exercise and healthy eating habits. But for me, sleep is more important to my proper functioning than daily exercise. This weekend I have Saturday off, so I hope to get caught up on my reading, house chores, go for a run weather permitting, AND I will be cooking a new vegetable! Not sure what it will be yet...
Any suggestions?
Have you done beets yet? I sauteed them and they turned out nicely. What was surprisingly good were the beet greens.

I have done beets once before this veggie quest was started. I microwaved them and made a cold salad with carrots, beets, (I'm forgetting a few ingredients) and a lime-cilantro vinaigrette.
ReplyDeleteThe store I work at sells these beautiful organic beets that are a bright orange color. I want to get a bunch of those. How do you do your beets?
Fennel is on my list!! I want to try your fb friend's apple-fennel salad recipe. Maybe that will be my undertaking for this weekend.
I did my beets boringly...roasted with salt & pepper, then threw the greens in with minced garlic, salt & pepper. The greens were excellent, we thought. I saw the pics of the organic beets and they looked INCREDIBLE! I roasted mine with the skins on and I think the crisp skins added to the flavor a bit. Plus I bet they don't stain like the red ones do! Did I tell you I made the apple-fennel salad? Don't recall offhand if his recipe called for walnuts or I pulled that off the internet, but they were perfect in the salad. I made a light fresh lemon-based dressing and it was a perfect relish side dish for any protein.
